Fujiyama
is an excellent restaurant for fine Japanese cuisine. I’ve
eaten there only a handful of times, so I spoke with one of
the restaurant’s frequent customers in an attempt to find
out why others rate it so favorably. The following is an interview
with Mr. “Ric”, a professor at a county college,
who lives in the area. He and his wife frequent Fujiyama at
least once a week for dining in or for take-out sushi/sashimi
platters.
Jill: “Why,
Fujiyama?”
Ric: “I’ve
eaten sushi all over the country for the past 50 years, as I’ve
been
in martial arts for that long, and it is top-notch compared
to all the
Japanese restaurants I’ve eaten in.”
Jill: “What’s
so good about the sushi?”
Ric: “It’s
excellent. It’s very, very fresh. The owners of the restaurant
travel to New York City daily and hand select the fish. The
fish is then specially packed and delivered in a refrigerated
truck that very same day.”
Jill: “The
owners hand-pick the fish?”
Ric: “Yes.
And not only do they choose the best, freshest fish, but also,
they
are happy to explain and recommend dishes to you. The owners,
Nick
and Helen, are very congenial and helpful. They help create
a very
friendly and relaxed atmosphere here at the restaurant. Nick
usually
bows when greeting you at the door.”
Jill: “What
do you usually order here?”
Ric: “Well,
there are a lot of traditional Japanese dishes like Chirashi
which
is excellent. The Beef Negimaki is also great. The menu is very
diversified.”
Jill: “How’s
the atmosphere here?”
Ric: “The
interior is beautiful. It’s also clean, warm, and inviting.
In nice weather there’s outdoor dining. And the owners
are very knowledgeable. This is a great place to take the family
or you can BYOB and have a nice meal with someone special. There’s
a very unusual screen (room divider) which creates privacy.”
Jill: “Is
it easy to get here from other areas of New Jersey?”
Ric: “Yes.
The restaurant is easily accessible from Route 80, Route 46,
and Route 78.
Jill: “How
would you sum up dining at Fujiyama?”
Ric: “I
think it’s simplistically elegant. The owners bring the
Asian
tradition to their restaurant and have created a wonderful dining
experience. Also, my wife and I have been eating sushi for over
20 years, and this place is by far the best in the area for
sushi.”
